When in doubt as to a wait person’s gender, I ask them their name so I as an older person will not unintentionally offend them. I try to avoid pronouns when in doubt. I have a name or they are my waitperson or order-taker person never he, she, miss, her, him, or they.

We have a transgender in our extended family so I am aware of the confusion and upset that can occur with pronouns.
