We eat grilled or baked chicken (usually thighs or breasts), shrimp, cod, salmon, or haddock. My husband does the cooking and he often adds red and orange peppers, onions, and mushrooms to the chicken. He loves adding fresh herbs and garlic to everything he can. We use olive oil for cooking, salads, and pasta. No tomato sauce because of potassium and sugar.

Pasta is served with veggies -whatever we have from broccoli, asparagus, and peas to peppers, mushrooms, small tomatoes, and a few black olives (not a lot as they are high in sodium). Leftover chicken or shrimp is often added to the dish.

The leftover pasta dish, if any, is served again with a topping of melted cheese. We hate to waste food.

Leftover chicken is ground up for chicken salad sandwiches. We also eat egg salad and grilled cheese sandwiches served with side salads for a main meal.

I eat a lot of fruit. My breakfast is 3 to 4 cups of fresh or frozen fruit (defrosted) in a bowl topped with half a container of yogurt and sprinkled with flaxseed. The fruit has no added sugar or preservatives. Strawberries, blueberries, peaches, cranberries, blackberries, raspberries, and pineapple are my regular breakfast fruits.

Two buttered English muffins and a cup of black coffee complete my morning meal.

Lunch may be leftovers from supper the previous night and a salad or a 1/2 cup of whatever veggies we have on hand. I drink water with lunch.

Dessert is a sliced apple with cheddar cheese
and a cup of herbal tea (peppermint, ginger, or lemon).


Snacks are a handful of pecans or macadamia nuts - both have low potassium per 1/4 cup. Or I eat cheese and crackers - both have protein. Cheddar cheese is my favorite.

I drink mostly water to help my kidneys. Occasionally I have a small glass of grape or cranberry juice. I also love fruit pies - Apple, peach, and blueberry but don't eat them regularly

A dietitian I met with recently suggested I add a slice of bread to dip in olive oil with my meals to add calories to my diet as I am very thin. That may not be necessary for you, but it definitely tastes good.
